Description

The ‘cobourg’ is the noblest part of the ham from The Duke of Berkshire®. It is injected with brine consisting of salt and a specific spice mix. It is then cooked in its own gravy, with the side bone still in. The meat has not been tumbled and has been traditionally smoked with beechwood.
